
Your favourite childhood sandwich filling, all grown up and made vegan. Enjoy our Waldorf chicken on fresh bakery bread with crisp lettuce.

Ingredients

½ batch of GYR Shredded Chick’un Mix, cooked according to instructions then chopped and shredded into small pieces (roughly 2 cups)

1 stalk celery, diced

1/2 apple, diced

2 tbsp walnuts, roughly chopped small
- 8 grapes, quartered

1/4 tsp salt
-
1/4 tsp pepper
-
1 tbsp Dijon or regular mustard

1/2 cup vegan mayo
- Juice of half a lemon
Directions
In a medium bowl, combine everything and mix well
Add onto freshly baked and sliced bread, top with crispy lettuce and enjoy!

Keeps in airtight container in fridge for 5-6 days.
