You’ll never need chicken eggs again to make the absolute best, (Tofu) ‘Egg’ salad sandwiches! Crumbled tofu is full of flavour from our Egg Seasoning and added crunch with relish or pickles and fresh peppers! Best made with fresh, locally baked bread, and topped with leaf lettuce, cucumber slices and cracked pepper! Also delicious scooped onto salads for extra protein!
Best Tofu Egg Salad Sandwich

Make this on Sunday meal prep and enjoy all week! Keeps in the fridge for 5 days.
1 package of firm or extra firm tofu, pressed
¼ cup of diced red or orange pepper (about ½ a pepper)
2 ½ tbsp of relish (or 1-2 diced dill pickles)
2 tbsp of GYR Egg Seasoning
⅓ cup of vegan mayonnaise
1 tbsp of Dijon mustard
1 tbsp of chopped, fresh Parsley
In a medium bowl, crumble the tofu with your hands
Add in the remaining ingredients and mix well to combine
Scoop onto fresh baked bread, top with desired sandwich toppings and freshly cracked pepper
Enjoy! Store any extra ‘egg’ salad in an airtight container in the fridge
