Lemon Lavender Cookies

You’ll need a lemon, your favourite non-dairy milk and coconut oil to complete this recipe. Makes 12 BIG cookies!
Lemon Lavender Cookie mix
6 tbsp of coconut oil
4 tbsp of plant milk
Zest & juice from 1 lemon
Set aside the package of icing sugar until later on
Preheat the oven to 325 and prepare a parchment lined baking sheet
In a medium glass bowl measure out the coconut oil then melt in the microwave and let cool to room temp
Pour the dry mix bag ingredients into a medium size bowl and create a well in the center, set aside
To the coconut oil, add the milk, lemon zest and 1 ½ tbsp of lemon juice, then pour into the well of the dry mix
Stir to combine well, it should be a shortbread-like dough
Scoop cookies onto the prepared baking sheet and flatten gently with your fingers to about ½” thick
Bake in the oven for 10-12 minutes, or until lightly golden brown just on the bottoms
Once cooled, mix the remaining 1 tbsp of lemon juice from the lemon with included icing sugar in a small bowl and put about ½ tsp on the top middle of each cookie. Let set, then enjoy!
