Forever a classic Brunch dish, the Eggs Benedict. Our vegan version, the tofu benny brings the same rich, buttery sauce to the plate! Pair it with our fluffy buttermilk biscuit and eggy flavoured tofu using our versatile egg seasoning.

Serves 8 people - or less, and have leftovers for the next few days! To make this recipe you need 8 GYR biscuits, so use a cutter that’s no larger than 3” in diameter.
8 freshly bakedGYR ButtermilkBiscuits, cut in half (make these the day of)
16 slices of fresh tomato (about3 large tomatoes)
A few handfuls of greens, we love spinach for this!
1 batch of GYR Hollandaise
2 packages of Extra Firm or Firm tofu
6 Tbsp of GYR Egg Seasoning
Water to boil tofu
Fresh chives, finely chopped & fresh cracked pepper for topping (optional)
Remove the tofu from the package, no draining necessary
Cut both tofu blocks in half, so you have four squares. Then, cut those squares into thinner slices by cutting the square block in half, and then half again.You’ll be left with 16 slices.
Place the slices into a pot, it’s okay if they’re layered on top of each other.
Sprinkle 6 Tbsp of GYR Egg Seasoning onto the tofu, then pour water into the pot, just enough water to cover the tofu
Bring to a boil and let boil for one minute then shut off. Leave tofu slices in the pot for now.
After cooking the tofu eggs, make the hollandaise sauce according to the package instructions. Once cooked, turn on warm setting and keep warm while you prepare the remaining ingredients. *If it thickens too much, just whisk in a little more plant milk!
Heat a large pan to medium heat and grease well with oil or vegan butter. Carefully transfer the tofu eggs into the pan and fry on the bottom until lightly golden brown. Flip and cook the other side the same.
While the tofu eggs are frying, use this time to lightly toast your biscuits in a toaster or the oven at 200 degrees
One the biscuits are toasted and the eggs have finished cooking, you’ll begin assembly.
Lay two biscuits per plate with cut sides up, top with greens & tomato slices
Then place 1 piece of tofu egg onto each biscuit piece.
Once all biscuits have their tofu eggs on them, use a ladle or large spoon to add Hollandaise on top of each tofu egg.
Top with fresh chives and cracker pepper and enjoy hot!
