Glazed Lemon Loaf

You’ll need two lemons, your favourite non-dairy milk and oil to complete this recipe.
Glazed Lemon Loaf mix
⅓ cup + 1 tbsp fresh lemon juice
¾ cup plant milk
¼ cup oil
Preheat oven to 375 degrees convection and grease a loaf pan, set aside
Remove the icing sugar packet from the dry mix, set aside for later
Pour dry ingredients into a medium size bowl and create a well in the centre
Add into the well of the dry ingredients the zest of 1 lemon, ⅓ cup of lemon juice (save the rest for later), the plant milk and the oil. Stir well until fully combined.
Pour the batter into the prepared loaf pan and gently spread out the top to even it out
Bake in the preheated oven for 35–40 mins or until a toothpick inserted comes out clean
Transfer to a cooling rack and let cool completely
Remove the loaf from the pan, and set on a plate or cutting board
In a small bowl, pour in the icing sugar, 1 tbsp of the leftover lemon juice, ½ tbsp of water and mix until fully combined. Pour the icing on the middle of the top of the loaf and use a spoon to spread out to the sides.
Let sit for 10 minutes before slicing
Store in an airtight container for up to 5 days
