
A holiday staple! These might just be the perfect holiday cookie filled with warming spices, rolled in sugar and baked to perfection.

Ingredients

Ginger Molasses Cookie Mix

¾ cup melted vegan butter

¼ cup water

¼ cup molasses (fancy or blackstrap works)
Directions
Remove the small sugar packet from the Ginger Molasses Cookie mix and put it into a small dish, set aside.
Preheat the oven to 325 degrees and line two baking sheets with parchment paper or silpad liners.
Pour the Ginger Molasses Cookie mix into a large bowl and create a well in the center. To the well, add in the melted vegan butter, water, and molasses. Using a fork, mix well until everything is combined.
Scoop cookies out evenly onto your baking sheets.
Once all are on the sheets, roll each one into a ball, then roll in the sugar.
Press each ball down to about ¾” thick, then bake in the oven for 17-20 minutes.
Let cool completely.
