
This fruity, fun take on a sweet pizza is easy to prepare and can be topped with your favourite fruit and even some melted chocolate for an extra treat! The base can be made the day ahead, but we recommend topping it just before serving.

Ingredients

½ cup of vegan butter (we use Earth Balance), softened

⅓ cup of soy milk (or any plant milk)

¾ cup of sugar

1 tsp of pure vanilla extract

1 ¾ cup of unbleached all purpose flour (or Bob’s 1;1 GF All purpose flour)

½ tbsp of cornstarch

1 tsp of baking powder

½ tsp of baking soda

¼ tsp of sea salt

2 containers of vegan cream cheese, softened
-
½ cup of icing sugar
-
½ tbsp of pure vanilla extract

Washed and cut fruit for topping + Melted Chocolate (optional)

Directions
Preheat the oven to 350 F and line a baking sheet with parchment paper.
With a stand mixer or electric hand mixer, beat the vegan butter and sugar together for 1 minute. Add in add in the remaining cookie base ingredients and beat on low until combined, then turn to medium and beat another 30 seconds.
Flatten out the cookie dough with your hands onto the baking sheet to create a pizza shape. It will be roughly 9-10” round in diameter and ½ inch thick. Make sure there aren’t any cracks in the dough.
Bake for 15 minutes, then remove and let cool completely on the pan.
While the base is cooling, add the cream cheese into a medium size bowl.
To the cream cheese, add in the icing sugar and the vanilla and mix with a spatula or large spoon very well to combine.
Transfer the base carefully onto a serving platter, then spread the cream cheese onto the base evenly. Top with fresh fruit and melted chocolate, then slice into pizza slices and serve!
