Recreate this classic and favourite sandwich of ours, elevated and vegan! Our chick'un salad is made from delicious plant protein your whole family is sure to love. For your sandwiches we suggest:
- Fresh local bakery bread
- Crunchy fresh lettuce
- Sliced tomatoes and/or cucumbers
- Microgreens, yum!

Ingredients

½ batch of GYR Shredded Chick’un Mix, cooked according to instructions then chopped and shredded into small pieces (roughly 2 cups)

1 stalk celery, finely chopped

¼ small white or red onion, finely chopped

1 tbsp lemon juice

¼ cup vegan mayonnaise

½ tbsp mustard
-
1 dill pickle, finely chopped, or use 1 tbsp relish
-
¼ tsp of pepper
-
1/8 tsp of salt
-
½ tbsp dried Parsley
Directions
Add all ingredients into a small bowl and mix well
Top freshly baked and sliced bread with about 1/3 cup of filling and all your favourite fixings, enjoy right away!

Store leftovers in the fridge up to 5 days.
