You’ll need our GYR Biscuit mix, apple cider or regular vinegar, soy milk (or your favourite non-dairy milk), and oil (vegetable, sunflower or olive oil) to make this recipe.

Ingredients

GYR Buttermilk Biscuit mix
-
¾ cup Non-dairy Milk (soy is our fave)

2 tbsp oil

1 tsp apple cider or regular vingaer

2-3 tbsp flour for dusting
Directions
Preheat the oven to 375 and line a baking sheet with parchment paper
In a medium glass bowl, pour in the plant milk, then add the apple cider vinegar. Allow to sit for 5 minutes
Then to the milk, add in the oil and mix
In a large bowl, add in the dry mix ingredients and create a well in the center, pour the wet mixture into the well
Use a spatula to fold the ingredients into the center, just until combined, being careful to not overmix!
On a lightly floured surface, use your hands to create a disc of dough about 1” thick
Use a cookie cutter to cut biscuit shapes
Transfer onto the baking sheet and bake for 16-18 minutes or until lightly golden brown on the bottoms
Slice in half and lightly toast for Tofu Bennys, spread on vegan butter and jam, or dip in your favourite homemade soup!
